How do customers approve quotes?

Yes. Once you send an estimate for approval, the customer reviews it and approves or rejects it from their customer portal.
The estimate reaches them through whichever channels you have set up for that notification, which can include:
Email, with a link straight to the estimate An in-app notification A message in your ongoing conversation with them, if you're reaching them on WhatsApp, Telegram, or another connected channel
Wherever it comes from, it points to the same place: the estimate's page in their portal. If you're sending it through a conversation rather than email, the message carries that same portal link, so the customer doesn't have to leave the thread or go looking for the right page themselves.

Once approved, the decision stays on the same customer record. Turning that estimate into a job, then into an invoice, is the next step — that's two separate conversions, not one, and it's covered under Quote to job to invoice pipeline.
